Loaded Pierogi Salad

Summer is our favourite season. We are hard at work on the farm growing the amazing organic veggies that we use in all our recipes. To celebrate our love for summer, we've create this perfectly summer-inspired loaded pierogi salad that layers our Dill Pickle Pierogi with bright summery ingredients like spinach and pickle, delicious eggs and mouth watering bacon.

To celebrate our love for summer, we’ve created this perfectly summer-inspired loaded pierogi salad that layers our Dill Pickle Pierogi with bright summery ingredients like spinach and pickle, delicious eggs and mouth-watering bacon.

Why We Love It

You can put this salad together quickly, and make as much or as little as you like. It’s perfect for a backyard get together, and is very kid-friendly. It also travels well, being easily packed for a picnic into separate containers and then assembled on site.

Make It Yours

This salad can also be customized. Try different combinations with various types of greens, like arugula or crispy romaine. We have made this recipe using all of our potato-based pierogi, like Double Smoked Bacon and Potato Pierogi or Cheddar Cheese and Potato Pierogi, and of course they all turned out delicious. Loaded Pierogi Salad

Ingredients

  • 6 slices of bacon, chopped

  • 1 dozen pierogi, we recommend Dill Pickle Pierogi or Double Smoked Bacon and Potato Pierogi

  • 4 cups of spinach

  • 4 kosher dill pickles, sliced

  • 4 hard boiled eggs, cut in half

  • 1/2 of a red onion, chopped

  • bunch of green onion, chopped

  • sour cream or ranch dressing

  • salt and pepper

Directions

  • Fry bacon in a sauté pan until crispy. Remove bacon with a slotted spoon and set aside, reserve some bacon grease for frying the pierogi in the next step.
  • In the same pan, sauté pierogi with reserved bacon grease until golden brown, about 5 mins per side. Set aside to allow to cool slightly.
  • On a large platter, arrange pierogi, spinach, bacon, pickles, and eggs, and top with red onion and green onion. Drizzle with sour cream or ranch dressing, season with salt and pepper, and serve.

Notes

  • You can customize this recipe to your taste with your favourite savoury pierogi flavour. You can also substitute with your favourite dressing, although we find this serves best with a creamy dressing.
